Spinach & Murshroom Breakfast Casserole
DIRECTIONS
In a large pan over medium high, add onions, mushrooms, and garlic and saute until onions are translucent. Add chicken broth, stirring frequently, and cook for 6 minutes. Add spinach and season with salt and pepper. Cook until spinach wilts. Spread mixture into a greased pan. Sprinkle cheese over mixture. Cover refrigerate overnight.
The next morning preheat over to 180°C. Deep fry Twister® Fries at 175°C for 4 minutes or until golden. Uncover dish. In a bowl, whisk milk, eggs, 1/4 tsp salt, and 1/4 tsp pepper. Pour egg mixture over spinach mixture. Insert cooked Twister® Fries into mixture. Bake for 30 minutes or until eggs are mostly set. Broil for 3 minutes or until top is browned and just set. Allow to stand for 5 minutes. Serve & Enjoy!
